Have you ever tried using zucchini in baking recipes? This may feel weird to add veggies to your baked good at first, but it really is wonderful. Zucchini in particular have this super power of bringing moistness to cakes, breads and muffins, while assuring a great texture and mild flavor. I've been obsessed with my Chocolate Chip Zucchini Bread for years, and I just created a muffin version that is equally delicious. A must try this summer!
